While the last two wines from Colorado were red, it’d be a misnomer to say that’s all the region has to offer.  Hailing from one of Denver’s most prominent urban wineries, Infinite Monkey Theorem Riesling features some killer bottle art, but does it also feature a killer taste?

Sight:  Pale gold core with a watery edges.

Smell:  Wet slate, nectarines, peaches, green apple, and honey are all present. Floral hints present themselves among the stone fruit and pome fruits.  Plenty of fruit and floral notes are present, the smell is classic.

Sip: The floral notes start off with a bright pop of flavor, and a decent weight.  With only a subtle hint of sweetness, this riesling on the drier side of the spectrum with a subtle roundness and a subduing of the brightness.   Peaches and nectarines border on being underripe, and are join by ripe lemon and hints of orange zest.  The hints of minerality are still evident, but fruit forward is the direction.

Savor:  The finish is quick, with plenty of orange blossom, honeysuckle, and hints of peach skin.

Infinite Monkey Theorem Riesling is light, round, and full of pleasing stone fruit and floral elements.  As riesling goes, it’s quite nice, and hits all of the right elements from the subtle sweetness to the fruit to the hints of floral character.  While not perfect, it shows that the western slope of Colorado has massive potential long term to make great wine.  If you happen to be in Colorado, and you’re a fan of riesling then Infinite Monkey Theorem Riesling is a must try.
