Sparkling Aviation

Happy 4th of July!  In celebration, we’ll be making a riff on a classic cocktail, the Aviation.  A normal aviation consists of Gin, Maraschino Liqueur, Lemon Juice, and Creme De Violette.  In honor of the sparklers, we’ve decided to kick it up a notch with a little sparkling Moscato!

Sparkling Aviation

  • 2 oz Gin
  • 1/2 oz Maraschino Liqueur
  • 1/2 oz Lemon Juice
  • 1/2 oz Creme De Violette
  • 1 oz Sparkling Moscato

Combine Gin, Maraschino Liqueuer, and Lemon Juice in a shaker with ice.  Shake, and strain into a martini glass.  Top with 1 oz of Sparkling Moscato.  Using a bar spoon against the side of the glass, slowly pour a 1/2 oz of creme de violette to finish.

The Sparkling Aviation uses a technique to layer it, sometimes known as Pousse Cafe style.

  • Pousse Cafe – This refers to a style of drink in which components are layered by density.  In this case, the Creme De Violette is lighter than the drinker, which allows it to sink.
  • Creme De Violette – I prefer The Bitter Truth here, I think the violette flavor is nicer, and it’s more blue than many others on the market.
  • Gin – I prefer Old Tom Gin here for it’s slightly sweeter, softer nature.
